Opinion: Do you know why I love this world? Because the certainties that one creates over the years can vanish in 15 seconds. I had totally lost hope with the ancestral, always that bad smell, always that sensation of I don't know... mold, brett etc. They instead, perfect ancestral method, without the slightest smell out of place. He deserves respect because I also believe he is the father of today's sparkling wine and this is the only winery that does him justice. Sweet, soft, lots of ripe fruit on the nose and in the mouth, refermented in the bottle only with the must and less than 40 mg/l of sulfur, where the legal limit, think about it, is 200 mg/l.

Pairings: good question, well savory appetizers without a doubt, I did well with various types of sandwiches... I don't like drinking wine alone but this would be perfect.
